Cooking a Whole Hog Head


The Kitchen Team were very excited to get in a whole hog head from our friends at New River Organic Growers. (http://www.newriverorganicgrowers.org/)

We start by brining the whole hog's head overnight. Then we boil the head in a large pot for 3-4 hours until tender.

The Finished Product: Head Cheese with Mizuna Salad and Cornichons.
