Souffle!

The other night one of our guest requested to have a special souffle "like the one they had in france"  for dessert. The kitchen loved the challenge.

Vanilla Souffle with Grand Marnier pour.


1/4 cup flour
1/3 cup sugar
1 cup milk
4 egg yolks
1 TBL spoon vanilla ext
5 egg whites
pinch cream tar tar
2 TBL butter

1oz  Grand Marnier "poured table side"

1) Butter and sugar souffle cups
2) On double boiler, combine sugar, flour, egg yolks, vanilla extract, whisk!
3) Temper with boiling milk, whisk until smooth (like anglaise)
4) Whisk egg whites, tar tar,  and sugar, until peaks
5)  Fold egg yolk mix and egg whites together
6) Place in souffle cup and bake 375*  10-15 mins
