CAVIAR!

Caviar is a luxury to have in a restaurant.  It will put any dish over the top.  The freshness and ocean like flavor brightens a lot of our dishes.  At Westglow we get our Caviar from American Caviar, they always give us a great product for us to use.

  This is a great video on how Thomas Keller gives a lesson on caviar.  We test our caviar at Westglow to determine the freshness, sweetness, saltiness, and what dish will go best with the caviar.  I wish we could eat this much caviar.  I think he ate more caviar in this video, then we have sold in our restaurant. LOVE IT!
